Crockpot Beef & Broccoli


  • 1 pound boneless beef chuck roast, sliced into thin strips
  • 1 cup beef consommé
  • ½ cup soy sauce
  • ⅓ cup brown sugar or honey
  •  1 tablespoon sesame oil
  • 3 garlic cloves, minced
  • 1 Tbs cornstarch
  • 1/8 c. cooled sauce from the crock pot after being cooked
  • 1 carrot, sliced very thin into coins
  • 1 onion diced, large pieces
  • Fresh broccoli florets (as many as desired)
  • Hot cooked rice (Jasmine, brown rice, or riced cauliflower), etc

Cut the meat across the grain into thin strips and then dump it into the crockpot.
In a small bowl combine the beef consume, soy sauce, brown sugar (or) honey, oil, and garlic. mixing well.
Cook on low for 5-6 hours.
Carefully scoop out about 1/8th cup of the sauce from the pot and put in a small dish to cool.

Combine the cooled sauce and the cornstarch, mixing well, then pour it back into the crockpot, stirring to combine. Cornstarch will only thicken Once, so be sure that you've used cooled sauce to mix it with, or it won't thicken your sauce.

Turn the Crockpot to High, add the broccoli, carrots and onions, stirring to combine. Cover and cook an additional 45-60 minutes without opening the cover. The sauce must come to a boil to thicken.

Serve over hot cooked rice

The carrots and onions are entirely optional, but add a bit more flavor and color to the dish.

Slow Cooker Bananas Foster Bread Pudding



  • 2 c. bread cubes—brioche bread works best 4 bananas, peeled and sliced (the riper the better!) 
  • 2 eggs, beaten 
  • 1 c. heavy cream or half & half 
  • 4 T butter, melted 
  • 1 c. packed brown sugar 
  • 1/4 c. spiced rum 
  • 1 tsp. vanilla extract 
  • 1 tsp. ground cinnamon 
  • 1/4 c. chopped pecans or walnuts 
  • 1/4 c. shredded coconut (optional

  1. Grease inside of slow cooker with oil or use a slow cooker liner.  Layer bread cubes on bottom of crock.
  2. Next, layer sliced bananas on top of bread.
  3. Combine eggs, cream, butter, brown sugar, rum, vanilla and cinnamon in a small bowl; pour over bananas and bread.
  4. Cover and crock on LOW for 1.5 hours. Sprinkle top of dessert with nuts and coconut and crock an additional 30 minutes.

Slow-Cooked Pulled Pork Sandwiches


Ingredients

1 tbsp vegetable oil
33/4 lbs boneless pork shoulder roast (netted or tied)
101/2 ozs campbell's condensed french onion soup
1 cup ketchup
1/4 cup cider vinegar
3 tbsps brown sugar (packed)
12 rolls (round sandwich, or hamburger rolls, split)


OR


3- lb. boneless pork shoulder
1 tub Knorr® Homestyle Stock - Chicken
1/2 cup ketchup
1/2 cup firmly packed light brown sugar
2 Tbsp. Dijon mustard
1/4 cup apple cider vinegar
2 Tbsp. Worcestershire sauce
10 Kaiser rolls or hamburger buns




Directions

Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until well browned on all sides.
Stir the soup, ketchup, vinegar and brown sugar in a 5-quart slow cooker. Add the pork and turn to coat.
Cover and cook on LOW for 8 to 9 hours* or until the pork is fork-tender.
Remove the pork from the cooker to a cutting board and let stand for 10 minutes. Using 2 forks, shred the pork. Return the pork to the cooker.
Spoon the pork and sauce mixture on the rolls.

*Or on HIGH for 4 to 5 hours.

Sweet Hawaiian Crock Pot



SWEET HAWAIIAN CROCK-POT CHICKEN--EASY AND YUMMMY!!

2 lb. Chicken tenderloin chunks
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce

Combine all together, cook on low in Crock-pot 6-8 hours...that's it! Done!
Serve with brown rice and you have a complete, easy meal!!

Sweet & Sour Pork



SWEET & SOUR PORK RECIPE


2-3 pound lean pork roast
1 cup granulated sugar (seems like a lot, but it mellows out)
½ cup white vinegar
4 tablespoons soy sauce
4 tablespoons ketchup
20 ounce can crushed pineapple (drained)

Brown the pork roast on all sides and put it in your slow cooker. Mix everything else and bring it to a boil, then pour it over the meat.

Cook on low for 4 hours or until very tender (spoon the sauce over the meat every once in a while).
.
That's it...super easy!! At the very end of the cooking time, I thickened the sauce a little with a slurry of cornstarch and water (right in the crockpot). To serve, slice the meat and spoon a little of the sauce over it; it's great with rice.

Crockpot Italian Chicken

Crockpot Italian Chicken

3 lb. chicken pieces
1 (2/3 oz.) pkg. Italian salad dressing mix 4 tbsp.
melted butter
1 small onion,
chopped 1 garlic clove, chopped
1 (10 1/2 oz.) can cream of chicken soup
8 oz. cream cheese 1/2 cup chicken broth 1 lb. of spaghetti
Cook on low for 4 hours.


Methods/steps
Place chicken pieces in crock pot and sprinkle Italian seasoning over chicken. Sprinkle with 2 tbsp. melted butter. Cook on low for 4-6 hours. Melt 2 tbsp. butter in a saucepan and sauté onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth. Add this mixture to crockpot and cook on low for an additional hour. Prepare spaghetti according to package directions.
Additional Tips
Ready in 7½ hours

Crockpot Beef Stew




Ingredients:
Flour
Stew meat
1 packet of stew seasoning
2 lg. cans of Beef Broth
2 Beef Bullion Cubes
1 cup of Red Wine
1/2 tsp Rosemary
1 can Stewed Tomatoes
1 bay leaf (optional)
Red Potatoes
Celery
Baby Carrots
Onion (I prefer red)
Zucchini
Salt
Pepper

~Coat the beef in flour
~ Brown stew meat on all sides and drain excess grease. (use small amount of oil for extra browning)
~ Add Meat to pot with Stew Seasoning, Beef Broth, and Bullion Cubes.
~ Next put in Celery, Carrots, Onion, Rosemary, Bay leaves and Red Wine.
Let that simmer for a while.
~ Then add the Potatoes, Zucchini, and Stewed Tomatoes
* I like to add the vegetables that will get too soft to the mix later so they don't get too mushy when this stew cooks.
~ Salt and Pepper the stew to your liking.
~ Cook on low for about 3 hours
* Add water if needed to keep everything submerged

Pulled Pork

Pulled Pork




Ingredients:
4 lbs of pork roast (or I use 2 2lb pork roasts)
2 white or yellow onions
2 cups of apple cider vinegar
2 cups of apple juice
1 tsp of liquid smoke
1 tsp crushed red pepper flakes
1/2 tsp cayenne pepper
2 tsp brown sugar
1/2 a bottle of regular/classic BBQ sauce (about 9 oz)

Cut up both onions. Place half the onions in the bottom of the slow cooker or crock pot. Place the pork roast in the slow cooker and top with the rest of the onions.

Place half the onions in the bottom of the slow cooker or crock pot. Place the pork roast in the slow cooker and top with the rest of the onions.

Mix together 1 cup apple cider, 1 cup apple juice and 1 tsp of liquid smoke and pour over the roast and onions.

Set the slow cooker to cook on low for approximately 6 hours. The roast should be ready to fall apart when you stick a fork in it. Remove the roast and remove the liquid and onions. (Note: You can strain the onions and add them back into the pot if you like….I prefer to discard them.)

Shred the roast and add it back to the slow cooker.

Mix 1 cup apple cider vinegar, 1 cup apple juice, red pepper flakes, cayenne pepper, brown sugar and half a bottle of BBQ sauce in a bowl.

Pour over the shredded pork and cook on low for another 2 hours. Transfer shredded BBQ to another container. I like to chop mine up a bit more before serving.

Serve by itself or on bread for sandwiches! I could eat this for 3 meals a day.

Crockpot Grinders
one round loaf Artisan Italian Bread
18 slices provolone
18 slices Mortadella
18 slices sweet or hot Capicola
18 slices Genoa Salami
sweet pepper rings
thin onion slices
olive oil
oregano and basil
Large 6 quart oval crockpot

Slice bread 13 times, almost all the way through but leaving 1/2 inch space at the bottom. Layer three slices of cheese and top with 3 slices each of Mortadella, Capicola, and Salami. Top with pepper rings and onions. Sprinkle with Italian Seasonings and repeat 5 times. Fold each bundle in half and tuck down between every other slice of bread to create 6 sandwiches. The sandwich may have “arched” its back, gently push down and wrap tightly in one then a second piece of heavy foil. Place in crockpot on top of a small aluminum foil pan or balls of foil, do not touch bottom of pan. Pour in 1/4 cup of water (I never like to have a “dry” crockpot, it just seemed to make sense to me to have a little water in there), it does nothing for the sandwich since it is wrapped up so tightly in foil. Cover and cook on low for 2-4 hours. To serve cut each sandwich apart, drizzle the insides lightly with olive oil, and enjoy. Makes six sandwiches with the center two being quite generous in size.
Note- you may not need all the meat and cheese as the sandwiches on the ends are a bit smaller and will not hold as much.
