Zucchini Boat
5 medium zucchinis, cut in half lengthwise
3 tbsp of butter
1 medium onion chopped
1 red bell pepper, chopped
3 gloves garlic chopped
1.2 tsp. dried oregano leaves crushed
1/4 cup grated parmesan cheese
preheat oven to 375.
scoop out pulp from zucchini and chop up.
melt butter and cook vegetables
put back into zucchini boat
top with cheese
bake for 30 minutes
