1 1/2 tsp salt
1 pk of bow-tie pasta
3 qts boil water
3 tsp olive oil
2 tsp unsalted butter
1 sm onion chopped
3/4 lb boneless skinned chicken breast (cut into chunks)
1/2 tsp pepper
1 bag of cleaned spinach, stemmed and coarsely chopped.
1/2 c heavy cream
1/2 c grated Parmesan cheese
Add 1 teaspoon of salt and bow ties to boil water.
Cook following package directs. drain in colander.
meanwhile, heat together oil and button in large skillet over medium high heat until butter melts.
add onion and saute, stirring often, until onions are tender. (About 3 mins)
Add chicken, sprinkle with remaining salt and pepper.
Saute, stirring constantly until chicken is lightly brown.
Add the spinach to the skillet; continue cooking and stirring until the spinach is wilted. Add the heavy cream; bring to a rapid boil.
Boil gently until the mixture is slightly thickened.
Combine cooked bow ties, chicken mixture, and parmesan cheese in large bowl.
Toss gently to mix well.
