Mexican Cornbread

  • 1 box jiffy corn bread
  • 1 8oz bag cheddar cheese shredded
  • 1 lb ground meat - seasoned with salt & pepper
  • 1 small yellow onion
  • 1 can cream corn
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup veg. oil
  • 2 tsp diced jalapenos peppers

Pre-heat oven @ 350
Fry ground meat and onions.

In large bowl mix, corn bread, cheese, corn eggs, milk, oil, jalapenos, & ground meat.

Spray a 8x13 baking pan with Pam.

Pour everything in pan and cook for 35 to 40 mins.
