Roasted yams



10-12 yams or Sweet Potatoes
Sweet butter
Brown sugar

Preheat oven to 450 degrees.
Scrub yams, pierce with fork and put in the oven until fork easily goes through (about 1 hour). Let yams cool and slice lengthwise (leave skin on). Arrange in layer in roasting pan. Dot with butter, sprinkle with brown sugar and repeat. Return pan to oven at 375 degrees for 30-45 minutes.
