Dehydrated Sweet Potato Matchsticks with Wasabi – Ingredients
4-5 large yams (though you can use any amount you want)
0.25 cups lemon juice
Lots of wasabi (we used a tube we had lying around)
2 teaspoons umeboshi vinegar (if you don’t have it, increase the salt)
A hefty pinch of salt
Dehydrated Sweet Potato Matchsticks with Wasabi – Instructions
Cut yams into matchsticks
Toss all ingredients together. Marinade for 30-45 minutes, tossing every 5 minutes or so.
Place matchsticks in dehydrator, dry at 125 degrees (if you have a variable temperature dehydrator).
After a few hours, toss the matchsticks (this will help prevent them sticking together).
When fully dry you will need to break apart any clumps that have formed; check that they are fully dry at the same time.
