Skillet Roasted Lemon Pepper Potatoes
Ingredients
2 sweet potatoes (about 20 oz. total)
1 large russet potato (about 12 oz.)
3 medium red potatoes (about 10oz. total)
1 lemon, juiced
3 tbsp. oil
2 tsp. kosher salt
1/2 to 3/4 tsp. black pepper
¾ tsp. garlic powder
Instructions
1. Preheat oven to 400°.
2. Cut potatoes into 1/8 inch circles.
3. Place them in a bowl with lemon juice, oil, salt, black pepper and garlic powder.
4. Toss to coat all potato slices.
5. Place slices in a large cast iron pan. Start from the outside and stack slices in a circle around the
outside. Then fill in the middle.
6. Bake for approximately 40 minutes or until potatoes are fork tender.
